There are two very simple things you can do to make even mediocre cuts of beef amazing.

Sear the meat (Even though I know better health wise)
Baste the beef as it finishes
It's really that simple. If you already know how to sear and baste, just stop reading now. If not, here's how I approach it.

Start with a properly & oiled (seasoned that is) cast-iron pan. Why cast iron you ask? Well, that's a bit of a story but in short:

99% of non-stick pans are bad for you
Stainless steel pans very in quality and are harder to get consistent sears with
Cast-iron pans are easy to cook just about anything in and they can go straight in the oven from the cook-top if you need to finish a larger cut of meat.
Sear with a high-temperature oil: I like to use an organic coconut oil to start the cooking and get a good searing on the beef. When the pan and the oil are good and hot place the meat in the pan, away from your body as not to splash your fleshy-bits with hot oil. Once the meat is in the pan just leave it alone. Don't shake it and play with it as if your on the Food Network. Just leave it there until you can see the sear developing from the side of the meat and the beef lets-go of the cast-iron pan nice an easily. It's a bit like talking a jumper off a ledge. You have to be gentle and precise. If you push to far to soon, it's a sloppy piece of meat.

Time to flip: Once you've seared the first side of the beef to a drooling @instagram like image of perfection lift the beef from the pan, roll the oils around for 10 seconds and find an unused portion of the pan to repeat the same show of beef-love (searing) on the others side of the beef.

This is the time to start adding veg. Onions and red bell pepper go a long way. If you're in to heat but find jalapeños to be a bit too much, add those now to steal some flavor while dulling the intense heat. Otherwise wait until you're at T-minus 60 seconds for the jalapeños.

The second side of the beef will take less time to cook than the first side. Keep an eye – and finger on the beef checking for your personal level on done-ness Just before the steak is done, drop a spoonful of @KerryGoldUSA grass-fed butter in the pan and your herb of choice. I like rosemary and/or sage but it's your call. Let it melt-down for a minute or so and as soon as you have a foaming liquid and herb butter sauce going, tilt the pan towards you a bit to pool-up the herbed/butter basil and start baling the butter onto the steak as if you were baling water from a sinking life-raft in an ocean full of sharks. Seriously, keep it going as the steak finishes. Once the butter turns a bit brown, you're in your final seconds of basting.

Well done! Now take a rest and let your beef rest for a few minutes as well. Why – I love hypothetical questions. Because the only thing a resting steak wants to do is soak it's liquids back up and make little aquifers of steak juice for your taste-buds to splash into. Really. Let the steak soak its juices back up a bit and you'll be a happy, happy camper.

This is a watercolor I began and completed yesterday, 23 September 2009. In order to find my subject matter, I closed my eyes and reflected on a few events enjoyed in the early 60s while stationed in Japan with VQ-1, based at NAS Atsugi, Japan. From the base, I was afforded a view of Mt Fuji everyday when the weather permitted. With a few moments, the joy of those memories became an easy subject matter. Thus, the above image. While I did take many photographs and made many sketches, I am sorry I did not spend more time taking photos and sketching. Japan is truly a nation where almost everywhere one looks, there is a view worth capturing. It is a beautiful nation with a beautiful and honorable people.

Did you know that Hearst Castle is only a few hours north of LA? If you ever end up in LA for a trip, be sure to set aside a few hours for a trip up to see this place. After you get out of the LA city-scape-area, the terrain totally changes - so does the "feeling".

Towards the end of the day, all the tourists had left. I had an escort with me for most of the day. This gentleman was a retired LAPD officer who spends a few days per week working up at Hearst Castle. There are several of these guys and gals that help keep the place secure. They take the job pretty seriously, as you would expect from any LAPD-type. After a few hours, I was able to wear them down with humor. I found they responded very well to anti-lawyer humor, btw. So keep that one in mind in case you ever get in a pinch.

Everyone there was extremely nice, and I loved the opportunity to capture Hearst as it is meant to be captured. I kept returning to this fountain time and time again -- until the skies and light was just right...

Any Problems with New Server?
We've recently moved over the entire website to the Rackspace Cloud. This was done because our traffic is growing like crazy, and we wanted things to be nice and speedy for everyone. Also, from time to time, Twitter can cause big surges in traffic that brought the whole thing to a grinding halt.

Let me know if you see anything is awry. It's hard for me to test anything, and there are always niggling little problems... Like, for example, I found out that Firefox didn't work because of some silly Facebook <iframe> code that still broke it even though it was commented out!

I'll put together a full review on Rackspace soon enough... along with a whole list of all the backend stuff that keeps the site humming along. I know we have lots of technical people that come to the site, and we all like geeking out about the specs and "how things work"!

In the "Baie de la Somme" in France (see map) there are herds of sheep/lambs that drink the salted sea water of the bay. They are called "pre salted lambs" and they provide some good meat.

The photo was cropped slightly and the saturation/contrast was increased.

Police allegations of an academic-led prostitution ring are getting even stranger.

Just last Sunday, authorities arrested a 68-year-old Farleigh Dickinson University physics professor because they say he was one of seven leaders of a 200-strong prostitution ring in New Mexico, where he has a summer home. Now, Albuquerque police say Dr. David Flory had an even higher-profile accomplice: septuagenarian political science professor emeritus F. Chris Garcia, who used to be the interim president of the University of New Mexico.

Albuquerque police say Garcia's role was to solicit "talent" for the pair's web site, which was called Southwest Companions. According to The Albuquerque Journal, police believe Garcia wasn't motivated by money, but that he wanted to "provide a safe place for prostitution without risk of arrest." Flory, meanwhile, told police he also didn't run the site for money, but rather considered it a "hobby," according to the Associated Press. The site's more than 1,000 members paid anywhere between 0 for a sex act to ,000 for an hour of a prostitute's time.

Flory is charged with 40 counts of promoting prostitution, while Garcia faces charges of promoting prostitution, tampering with evidence and conspiracy.

An employee at Farleigh Dickinson, who wished to remain anonymous for fear of retaliation at work, told the Lookout that the incident is a big PR blow for the university, which is still recovering from the revelation in 2005 that it employed a member of the pro-Nazi National Socialist Movement to teach European history.

"People jokingly refer to it as 'Farleigh Ridiculous,'" the employee said of the school's battered reputation.
The source described Flory as a "very opinionated guy, very sure of himself and sure of his opinions." He wore a large cowboy hat and cowboy boots, which made him stick out from the New Jersey academic crowd.

Fairleigh officials said in a statement they were "saddened" by the charges.

At the beginning of this semester I made the worst decision I could possibly make. As I was switching my schedule around during add/drop week, trying my best to make it as convenient as possible, I made the irrational choice of adding an online course to my already hefty load of classes.

I already had an unpleasant history with online classes, but for some reason I felt confident in myself and my ability to succeed.

My mom even questioned my choice of adding it to my schedule. She knows all too well how good I am at procrastinating. I’ll admit it is my specialty. But, I went ahead and registered throwing her concerns to the wind. This time it would be different.

This time I’d do my work and not let myself get behind. I was far too optimistic. I was under the impression that I’d actually do the assignments prior to the day that they were due. But, I didn’t learn.

When I signed up for the class my thought process at the time was, “It’s just the computer proficiency class and it is a requirement, so how hard could it be?”

In reality, it’s really not that hard of a class. But, actually doing the assignments on time is a true test of character.

It takes an incredible amount of self-motivation and energy for me to even consider looking at the course webpage let alone start on an assignment, especially after a long day of classes.

All I want to do is stuff my face with food, lay in bed and watch Breaking Bad for the next few hours. But no, there are things to be read and assignments to be started online.

There is nothing in this world worse than an online class and it’s unfortunate so many college students have to resort to taking them.

I know there are some people who actually prefer online classes, but they are very far and few between. Online classes are ridden with busy-work assignments and in my opinion, take away a students’ drive and motivation. There’s no professor to give you interesting insights and all the learning is done through reading and busy work. They may seem like an easy alternative to your traditional classroom setting, but to me, they’re a waste of time.

I know if I had decided to take the class on campus my grade and sanity would probably be more stable than they are now. I’d be more motivated and up-to-date on my course work and even be learning interesting things in the classroom.

Now that it’s about that time to register for classes again, I’d like to warn the general population of FSU students that online classes are never a good decision—especially if you’re anything like me. I’m confident that this will be my last online class, ever.

1951 Nash Ambassador Front End close-up. Nash used the Ambassador name on its plushest models from 1949 to 1957. N-K President George Mason was an outspoken supporter of aerodynamics in car design, and the post war Ambassador is best remembered for its enclosed front wheels. When Nash rolled out its Airflyte body style, Ambassador sales enjoyed a significant gain by selling just four door and two door sedans in the 1949-1951 market place. The Airflytes also featured fully reclining seats that could turn the car into a vehicle capable of sleeping three adults, however this would also earn the dubious distinction of being the make-out automobile of choice for teenagers coming of age in the 1950s. The 1950 Ambassador became the first non-General Motors automobiles to be equipped with GM's Hydramatic automatic transmissions. I started www.hdrspotting.com/ (and see the Editor's Picks too) with a friend to help bring more attention to other HDR photographers out there. We developed a cutting-edge "attention generation engine", designed to increase traffic for new and old artists all over the world. The site is still in beta, and thus, invite only. You have to know someone to get an invite (don't ask me - I don't hand them out). But you can pick up extra in the HDR group on Facebook, Flickr, and keep searching Twitter for when people have extras to give away.

Daily Photo - Grand Central on a Rainy Night During the Holidays

I took this about the same time I went into Grand Central Station and performed my unique star-pattern maneuver to evade security guards. I described it in detail the next day when I spoke at B&H.

I've perfected a panoply of techniques to circumnavigate and befuddle security guards who don't like tripods. Maybe I will write a little e-book on this some day.

It seems I had been tagged a week or two back I had originally said I would never participate in the tagging but as I was asked nicely and the person who tagged be apologized after she tagged me I decided to do a list. Ten things most of you don't know about me hmmmmm ! Anyone else tags me I will hunt you down and sing to you for four hours straight and believe I can't carry a tune even in a bucket !!!!!

1: I am a two time cancer survivor, and when I hear of people undergoing chemo it becomes very personal to me whether I know them or not !


2: My best friend, who is also my photography companion, also happens to be my wonderful wife Ann


3: Further to number two we will be renewing our vows on Aug 29th, our anniversary, this Saturday. (I did give her a chance to run, but she refused)


4: I am as avid a fly tier, as I am a photographer, and I do fish with the flies I tie
catch and release only

5: I was a police officer (Military)


6: A car accident ended my Military Career and put me in the hospial for ten months, almost like Evel Knievel have had just about every bone in my body broken. Now everyone knows why I walk funny I really am not drunk !


7: I really enjoy my evening drink of wine or maybe a Brandy or Appleton Estate 21 year Old Rum


8: I am an environmentalist is every sense of the word.


9: I am a blueberry addict, love them however I can get them and I eat them everyday in one way or another


10: Lastly I am an adrenalin junky, have done a bungee jump, sky diving, hang gliding and para gliding, too old for most of this now but plan to do a solo sky dive on my 65th birthday.

The spring 2013 hackNY student hackathon brought in hundreds of students to Columbia University's Fu Foundation School of Engineering and Applied Science April 6-7 for 24 hours of creative collaborative hacking on New York City startups' APIs.

NYC Startups, selected by a student organizing committee, presented their technologies at the beginning of the event, after which students formed groups to work through the night implementing their own ideas for fresh hacks built on top of these APIs.

On Sunday afternoon students presented their projects to an audience including a judging panel featuring members of the NYC startup community, which selected the final winning teams.

Since April 2010, hackNY hosts student hackathons one each semester, as well as the hackNY Fellows program, a structured internship which pairs quantitative and computational students with startups which can demonstrate a strong mentoring environment: a problem for a student to work on, a person to mentor them, and a place for them to work. Startups selected to host a student compensate student Fellows. Students enjoy free housing together and a pedagogical lecture series to introduce them to the ins and outs of joining and founding a startup in NYC.
